WHAT I EAT IN A DAY PT 5 (VEGAN)

good morning breakfast I made overnight oats I went ahead and prepped some oats the night before with some chia seeds and hip milk literally all you do after that is shake it up and put it in the fridge you can leave this in the fridge for four hours or overnight and it will go from this to this and Mason for the filling I’m going to be using strawberries coconut yogurt and strawberry jam this coconut yogurt is really good it’s pretty potent so you don’t need a bunch of it then I skipped out half of the oats and just layered in the yogurt with some strawberries and some Jam this gives it a more parfait feel you don’t have to go in on the super Martha Stewart endeavor but it looks very nice and that is that a while back I was looking for my favorite hemp seeds online and I stumbled you doing the skin is the best part so I just cut these into wedges and layered them on a baking pan with parchment paper no oil just a little bit of garlic powder and Italian herbs pop those in the oven 375 for 15 to 20 minutes well that was cooking it went ahead and made two cilantro chutney sauce which is just three garlic pods a large bunch of cilantro salt and pepper lime juice some water and avocado is optional it makes it a little bit creamier it’s really nice but then I went ahead of me to chop salad this yields a lot of servings but I wanted to make a lot for myself and my boyfriend and so I did I cut some Persian cucumbers bell pepper radicchio [Music] tomatoes purple onion and then I put everything into a big bowl added some broccoli sprouts [Music] and then I made the dressing which is the same dressing I pretty much make all the time which is just equal parts lemon and olive oil a bit of apple cider vinegar dried herbs garlic powder black pepper and a pinch of Himalayan sea salt and of course I added some hips ease to my chopped salad along with some cooked garbanzo beans half of an avocado and poured the dressing over at this time the secatur should be done and now for the beautiful shots of the food and tucked away the rest for later for a snack I had a mango sidenote I’ve been having so much more fruit in my diet and I feel extra amazing just wanted to let y’all know for another snack I had some banana and some dark roasted crunchy peanut butter with it I had some hemp milk with it because it is the perfect combination then for dinner I went ahead and chop some onion celery carrot mushrooms garlic roma tomatoes wash some lentils and I’m gonna be using coconut oil tomato paste your favorite pasta sauce water herbs pepper salt bay leaves the first thing I’m gonna be doing is setting my pressure cooker to saute adding into coconut oil and when that’s hot throwing in the onions celery and carrot once that starts to sweat a little bit about five minutes or so then I’m gonna add in the mushrooms and garlic I also added in some pepper there a little bit ago then I added in my tomato paste and sauteed the vegetables for a little bit longer [Music] totally optional I added in a little bit of red cooking wine but it’s not necessary this just gives the flavor of a little bit more of a Balinese flavor which is what I was trying to accomplish with this dish making it vegan then I added in my lentils tomatoes water tomato sauce that’s just me putting water in the jar to get the rest of the sauce out spices and giving everything and nice mix once that’s all mixed up I’m gonna set my pressure cooker to 20 minutes and cover it and make the pasta [Music] after 20 minutes everything should be done and that is dinner a nice touch is some vegan parmesan the one that I’m using is by following your heart and it is really good on top of this pasta alright guys that’s a wrap I am going to eat some late dinner now we just got back from a movie premiere called the game-changers right beep or game-changers the game changers it was amazing you need to go watch it I’m gonna have some dinner
